No Bake Nutella Cheesecake

This is my "secret weapon" recipe, as people with think you have spent hours slaving away at this, but really it's the product of minutes of work in the kitchen. It's so simple that I started making this when I was just 12 years old! I discovered this on The One Pot Chef on Youtube, and over the years I've added my own twist to the basic recipe and my most recent creation was the picture you can see above. 

This really is the most simple recipe that will get everyone at the dinner table talking and admiring your "hard" work. There's just 5 ingredients and takes at most 15 minutes to prepare. This is such a crowd pleaser and it will please the chef too with how simple it is. 



INGREDIENTS
  • 250g digestive biscuits
  • 100g butter
  • 400g jar of Nutella
  • 500g cream cheese
  • 70g icing sugar
METHOD
  1. Chop up the butter into cubes and place in microwavable dish. Add one tablespoon of Nutella to this, and microwave for 1 minute until everything melts together. 
  2. In a mixing bowl, crush up the digestives into thin crumbs (or do this in a food processor if you have one).
  3. To the crushed digestives, add in the chocolate butter mixture. Stir these together until it looks a bit like wet sand.
  4. Add this mixture to a tin with a removable bottom, and using a flat bottomed glass press the mixture down so that it's even. Place this in the fridge to chill while you make your cheesecake filling.
  5. Place the cream cheese into a mixing bowl, and sift in the icing sugar. Whisk this together using an electric whisk.
  6. To this, add your Nutella (I like to use the full entire jar!!) and whisk this together until its smooth.
  7. Gently transfer the mixture into the digestive base, and smooth it out until it's nice and even.
  8. Pop this back into the fridge and leave to set for 4-5 hours.
  9. You can either serve at this point alone, or decorate your cheesecake however you fancy! I always like to add a few strawberries no matter what decoration I go for. Go crazy and decorate with anything you fancy and ENJOY!

This recipe is absolutely perfect for the upcoming Christmas season, to complete the perfect dinner date, or to bake and deliver as a doorstep present for someone special. It's completely dummy proof so there's no excuses to not try this - and it's great fun to make too! Be careful though - as soon as you have a taste you'll quickly become addicted and won't go back! I've been eating this cheesecake since 2012 and I still ament sick of it!
