Stuffed Chicken Wrapped in Proscuitto
Welcome to my fourth blog. This time I'm bringing gourmet restaurant goodness straight to your dinner table at home with this stunning stuffed chicken wrapped in proscuitto...
Just look at it - chicken breasts stuffed with whole grain mustard, edam cheese and fresh basil. Wrapped in proscuitto ham. Served with creamy mash, roasted carrots and a delicate white wine and parsley pan sauce. This is the absolute perfect winter warmer to bring food straight from a michelin quality restaurant to your very own dinner table. This isn't our usual low-calorie option, but for lack of better words, who cares?! This is worth every single calorie. This recipe will majorly impress anyone you cook this for because it looks just as amazing as it tastes. Pair it with a glass of wine, shut your eyes, and you won't believe that this isn't the work of a professional.
INGREDIENTS & METHOD (Serves 2)
CHICKEN
- 2 chicken breasts
- 2 slices of edam cheese
- 2 heaped tsp wholegrain mustard
- 10 basil leaves
- 6 slices proscuitto
- For seasoning: salt, pepper, chilli
- Slice and flatten chicken, and season with salt, pepper and chilli.
- Stuff with mustard, cheese and fresh basil.
- Roll it up tight and wrap in proscuitto, and then clingfilm.
- You can either cook this straight away, or keep in the fridge for up to 2 days (make carrots at this stage).
- Sear chicken until golden brown, and put in oven with carrots for 5-10 mins while you make sauce.
CARROTS
- 3 carrots (peeled and cut into bite sized slices)
- For seasoning: salt, pepper, garlic powder, paprika, olive oil
- Season carrots in the above seasoning.
- Put in the oven at 190C for 20/25 mins.
- TIP - make sure to give them enough space so they get crispy.
SAUCE
- 2 diced shallots
- 3 cloves garlic (minced)
- 100ml white wine
- 300ml chicken stock
- 100g butter
- Chopped parsley
- For seasoning: salt, pepper, chilli.
- Add shallots and garlic to the same pan used to sear chicken.
- Sautee for 2 mins then add wine.
- Once reduced, add the stock.
- Reduce by half and add butter, parsley and season.
Plate up the chicken and carrots on a bed of mashed potato, drizzle the sauce and ENJOY!

This is my favourite recipe for this blog to date as it honestly feels like a gourmet meal cooked by a chef, and completely embodies what There's Food At Home is all about. It's the perfect dish to cook to impress a loved one this winter on date night in, or to impress your family or friends with. It really is gourmet cooking at a dummies level!
